Crack Chicken Burgers

Prepare the Panade
In a large mixing bowl combine...
- 1/4 cup dry breadcrumbs
- 2 tbsp milk
Let the mixture sit for 2–3 minutes until the breadcrumbs have fully absorbed the milk, forming a thick paste (the panade).
Mix and Form
To the bowl with the panade, add...
- 1 lb ground chicken
- 8 slices bacon, finely chopped
- 1 cup extra sharp cheddar, shredded
- 2 tbsp dry ranch seasoning
- 1 egg
Gently mix until just combined. Form into 6 patties (approx. 1/3 lb each).
Note: For the best texture, mix the ingredients just until they come together. Overmixing will make the patties too dense.
Toast the Garlic Buns
Spread the cut sides of...
- 6 large hamburger buns
with..
- butter
- a dusting of garlic powder
Toast in a skillet or broil on a sheet pan for 2–3 minutes until golden brown.
Assemble
Heat a greased skillet over medium heat. Pan-fry the chicken patties until the chicken is cooked through and the cheese is slightly crispy on the edges.
Place the chicken burgers on the toasted garlic buns. Serve plain to let the ranch and bacon shine, or add your favorite toppings like lettuce, tomato, or extra ranch dressing.
